Daddy Cakes still a firm favourite

During this crazy COVID-19 time, Rushall Park resident Liz Montgomery is doing what many others are doing, that is cooking.

Like many other residents in Old Colonists' Association of Victoria's villages, life for Liz Montgomery in 2020 has been turned upside down.

Rather than sit and worry, she has taken to the kitchen - her happy place - where she plunders recipe books from the past to cook up different cakes, biscuits and slices. It reminds her of her time as a child in her mother's kitchen when she returned home from school to the aroma of baking.

One of her favourites was "Daddy Cakes," no doubt one of her father's favourites. It is a simple recipe and one which she cooked for her boys when they were little and she is now doing the same for her grandchildren.

Daddy cakes

Cream 4oz butter with 3/4 cup sugar, add 2 unbeaten eggs, add 1 1/2 cups SR Flour

1/2 cup milk

1 cup sultanas.

Cook in moderate oven in patty pans for about 20 minutes.

Liz normally spends two days a week with her grandchildren. She has been keeping in touch via WhatsApp a few times a week and it is great for them to fill me in on how they are spending their time and for them to know what we are up to here."

"When we come to the end of this isolation my wish would be that we all be a little kinder to one another and be thankful for all we have," Liz says.

In the meantime, it is back to baking!
