Kim D’Angelis is OCAV’s Volunteer Coordinator. One of her favourite memories is her nunna Vinnie cooking Sunday lunch.

 

“She used to make Qarabali Mimli for the whole family on Sundays for lunch. She had nine children and a lot of grandchildren and whoever popped in to their north Melbourne home on a Sunday she would feed! It didn’t matter how many, she always had enough...."

(Maltese Stuffed marrows)

(Or large zucchini if you can’t find marrows)

Fry onion/garlic

Then add 500g pork mince &

1kg beef mince

Then 3table spoons tomato paste and one can mutti chopped tomatoes. Take flesh out of marrows chop small and add half to mixture

Add one small pk Parmesan cheese

Turn off stove then stir in one egg

 

Put mixture in marrows, top with Parmesan cheese.

Cover with foil and cook for 1 hr on 160 then with foil off for half hr. Voila!! Enjoy!!
